Globally, kitchen enthusiasts routinely try to turn a humble sack of potatoes into a hearty evening meal. In my culinary journey often involve a aromatic Sri Lankan potato curry, a savory Gujarati version, or even a patiently simmered Spanish tortilla for a special occasion. This time, however, the solution comes from Greece. Yahni refers to a classic Greek preparation technique: produce braised generously in olive oil and tomatoes until perfectly tender. It’s as much a philosophy—it’s a celebration of the simple, the slow, and the incredibly satisfying (and yes, it also makes a wonderful dinner).
Enjoy this with a rustic loaf or Greek pitas for a complete main. It also goes perfectly with a assortment of mezze or even crowned with a fried egg for a unexpectedly great breakfast.

Serves: 4 people
Heat five tablespoons of olive oil in a large, heavy-based pot that has a cover. Set it over a medium-high heat. Once the oil is shimmering, add the thinly cut onion and a teaspoon of salt. Sauté, giving it an occasional stir, for about 10 minutes, until the onion is soft enough to succumb to a wooden spoon.
Introduce the minced garlic and cook for about two minutes more, to release its aroma. Then, incorporate the potato wedges and oregano, mixing until they are evenly covered in the oil. Spoon in the tomato puree and cook for one minute. Add the chopped tomatoes along with 400ml of water. Bring to a boil, then cover the pan, turn down the heat to a gentle simmer, and leave to cook for 20 minutes.
Meanwhile, whizz up the whipped feta. In a food processor, process the feta, Greek yoghurt, lemon zest and juice, three tablespoons of olive oil, and a couple of good pinches of salt until the mixture is luxuriously creamy.
Stir the pitted kalamata olives into the tomato and potato mixture. Continue to simmer uncovered for a further 15-20 minutes, until the potatoes are easily pierced with a knife and the sauce has become beautifully cohesive.
Serve the steaming yahni into shallow bowls. Finish each with a healthy dollop of the whipped feta and a scattering of dried oregano.
